Specializing in baking solutions, Pman will be at the biggest event on scientific progress in natural fermentation. The edition takes place from the 14th to the 17th of June in Bolzano, Italy.
PMAN, a company that delivers integrated solutions for the Bakery segment, and one of the main leaders in the market, will participate in the VIII International Symposium of Sourdough, which will take place from June 14th to 16th, in Bolzano, Italy. The event will discuss topics on sourdough biotechnology, functionalities and health aspects of cereal and non-cereal fermentation, in order to discuss and present the latest research and development results.
PMAN will have its experts on the subject of sourdough and will participate in debates on the latest scientific progress in the interaction of fermentation microbes and cereal and non-cereal raw materials, from microbiological, biochemical and molecular aspects to technology, nutrition , sensory and health. “The sourdough market has been growing exponentially all over the world, participating in this symposium is extremely important, as it is the moment to discuss the progress of sourdough with the main specialists in the subject. We at PMAN were present at the event and brought all the knowledge to apply in our production. In the United States alone, the sourdough market jumped from US$ 298 million in 2014 to US$ 2,7 billion in 2020, which represents an average annual growth of around 45%,” comments Paulo Cavalcante, CEO of PMAN .
About Sourdough
Sourdough is a natural yeast, also known as sourdough, English name, or levain, in French, used since the production of the first breads. It is obtained from natural ingredients such as wheat flour and follows a delicate and sensitive fermentation process by the action of specific bacteria and yeasts. These microorganisms are responsible for the key to the nutritional and quality characteristics of bread. “The product offers more possibilities for flavors, combinations and quality, as they are concentrates made with selected ingredients, allowing them to be used in any bakery recipe, with simple and quick application. The production of breads with natural yeast is one of the oldest food production techniques in the world, there are records of its use dating back to 3.700 BC”, highlights Paulo Cavalcante.
The sourdough market has been growing exponentially worldwide, in the United States alone it jumped from US$298 million in 2014 to US$2,7 billion in 2020, which represents an average annual growth of about 45%. By 2025, projections indicate that the segment will reach US $3,5 billion. In Europe, surveys show that 95% of consumers of bakery products are aware of products made with sourdoudh and 70% buy bread made with natural yeast.
Expectations for the future for sourdough in Brazil are very positive due to the fact that the Brazilian consumer is aligned with the global trend of increasing consumption of naturally fermented bread. It is worth mentioning that sourdough is a product where the 'in natura' seal is fully released within the Bakery Industry.
PMAN is a family business that began its activities in February 1996, initially acting as a representation office for a Dutch company and selling non-stick coatings for baking molds. It was a pioneer in Brazil in the sale of dry yeast. As of 2000, PMAN began to focus on the commercialization of additives and preservatives for the bakery industry, remaining in this segment until today.
In 2008, the company began an international expansion process, opening commercial offices in the US and later in Chile. In 2020, it began expanding its portfolio with the inauguration of the industrial plant, and entered into a knowledge transfer agreement with the century-old company Böcker, which includes the rights to produce and distribute Sourdough in the Americas. Currently, the company has directed its investments to new factory installations. With its own production of its equipment for spraying mold inhibitors and release agents, PMAN offers its customers technical assistance, through a specialized area, to guarantee the protection of its products and adequate service.
The company currently operates with an administrative office and two industrial plants in Guarulhos, in the Metropolitan Region of São Paulo, which add up to around 3.000 m². The company has sales offices and warehouses in Miami, USA and Santiago, Chile.
