Samba D is a product based on dehydrated sourdough and Vitamin D for the preparation of French bread (pão francês). Dehydrated sourdough, even if inactive, has organic acids in its composition, such as lactic acid, which helps in the acidification of dough which, in turn, at a given pH, can promote benefits such as reducing the glycemic index of bread and can also help improve mineral absorption. In addition to the nutritional benefits, sourdough has interesting flavor and aroma characteristics.

Vitamin D fortification was studied, verifying the following aspects:

– About 28% of the Brazilian population has vitamin D deficiency;

– Foods that are naturally sources of vitamin D are not usually consumed (for example: cod liver oil);

– 80% of the supply of Vitamin D comes from skin exposure to sunlight and a large part of the population does not have adequate exposure;

– Bread is a widely consumed food throughout Brazil, being a great vehicle for vitamin fortification.

French bread roll with Samba D is a great option to help supply Vitamin D, contributing 15% of the RDI (recommended daily intake) in 50g of bread, the equivalent of a French bread. In addition, it allows the consumption of bread in a healthier way, with the contribution of the benefits of sourdough.
