What is a Bread Concentrate?
The Bread Concentrate, also called “concentrate”, is a mixture of the micro-ingredients of a baking formula. It may contain enzymes, oxidants, aromas, preservatives and compounds that characterize the flavor of the product (milk powder, cornmeal, nuts, etc.). It does not contain ingredients that are readily available in large quantities, such as flour, yeast, sugar and water.
Bread Concentrate development is a response to the inefficiency of maintaining inventory of multiple ingredients used in small quantities. It's also a solution to weighing challenges that come with using microingredients (proper scales, time, and careful attention).
What is the difference between Bread Concentrate and premix?
The main difference is the flour. The premix contains 100% of the formula flour, while the Bread Concentrate is flour-free.
What are the benefits of the Bread Concentrate?
Choosing to use a Bread Concentrate versus premix primarily means cost savings. Flour incorporated into the premix is significantly more expensive than bulk flour. It is worth remembering that the use of good quality flour for baking is important to guarantee the quality of the final product.
