Encapsulated sodium bicarbonate: technology applied to baking.

Encapsulated sodium bicarbonate is an advanced solution for chemical leavening applications, especially in processes that require precise control of gas release, dough stability, and longer shelf life.

To understand its benefits, it is essential to first understand how traditional baking powder works.

How does baking powder work?

Baking powder is composed of sodium bicarbonate and a combination of one or more leavening acids. Among the most commonly used acids in the industry are:

  • Monocalcium phosphate (MCP)
  • Sodium Acid Pyrophosphate (SAPP)
  • Sodium aluminum sulfate (SAS)
  • Sodium aluminum phosphate (SALP)

When these acids react with sodium bicarbonate, carbon dioxide (CO₂) is released, the gas responsible for the volume and structure of baked goods.

The speed of this reaction, known as the Rate of Reaction (ROR), varies depending on the type and combination of acids used.

New factor affecting the reaction

In addition to the combination of acids, the chemical type of the leavening acid also directly influences the reaction rate, especially through its acid strength and dissociation constant (pKa).

The pKa determines how easily an acid releases H⁺ ions to react with sodium bicarbonate, impacting the timing of CO₂ generation in the process.

In practical terms:

  • Fast-reacting acids, such as monocalcium phosphate (MCP), react already

at room temperature;

  • Acids with intermediate or slow reaction times, such as SAPP and SALP, exhibit greater gas release during heating;
  • Thermoactivated acids, such as SAS (sodium aluminum sulfate), react predominantly at temperatures above 60 °C.

This balance between acid types allows for modulation of the fermentation profile throughout the processing.

Why encapsulate sodium bicarbonate?

The microencapsulation of sodium bicarbonate, usually with lipid material, has the main objective of delaying its solubilization. In this way, the encapsulated bicarbonate becomes less soluble than conventional bicarbonate.

Therefore, the release of CO₂ is mainly controlled by the breaking of the capsule during cooking, and not just by the solubility of the leavening acid.

In practice, this means that the ROR of baking powder can be adjusted not only by the choice of acids, but also by the use of encapsulated sodium bicarbonate, reducing dependence on the type of acid used.

Neutralization value (nv)

Another fundamental parameter in the formulation of chemical leavening agents is the Neutralization Value (NV).

NV is a stoichiometric factor that defines how much sodium bicarbonate is needed to neutralize 100 parts of leavening acid, ensuring the ideal balance of the reaction.

In simplified terms:

  • High NV → requires a larger quantity of bicarbonate
  • Low NV → requires less bicarbonate.

Correct NV adjustment directly influences:

  • the final pH of the product
  • the aftertaste
  • the overall efficiency of CO₂ generation
  • the overall performance of chemical leavening

Thus, simultaneous control of acid type, ROR, and NV allows for greater predictability and industrial standardization.

Benefits of encapsulated sodium bicarbonate

The use of encapsulated sodium bicarbonate in chemical leavening agents offers clear advantages for industrial baking:

  • Larger final volume of products, especially in cake mixes.
  • Preventing premature reactions and avoiding losses while still in the packaging.
  • Greater stability of frozen and refrigerated doughs.
  • Concentrated CO₂ release during the cooking stage, ensuring better structure.
